The Best Chocolate Cake

  • 240 g flour
  • 2 cups sugar
  • 3/4 cup cocoa powder
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  1. Combine dry and wet ingredients (excluding boiling water) separately.
  2. In a stand mixer, add wet ingredients to dry until well combined.
  3. Add boiling water and mix until incorporated.
  4. Prepare 3 cake pans by oiling and lining with parchment. Alternatively, use 1 pan and bake the layers in batches.
  5. Bake at 350F for 30–35 minutes. Cool completely before frosting. (In my opinion, this cake is wonderful with a minimal amount of frosting or ganache).
  6. Serve with fresh fruit and enjoy!!
