One-Bowl Vegan Oil-free Banana Bread

This banana bread is made vegan with the chia egg and oil free with the peanut butter. However, the peanut butter does have a noticeable taste, so I suggest using almond butter or cashew butter instead. Chia seeds also have more of a neutral flavor than flax seeds, and still lend well to making a vegan egg.

The loaf that I made was a bit dry, so next time I may try to add some more water or vegan milk or cream. The higher water content will allow steam to build up in the bread, moistening it.

Everything comes together in one bowl, and your batter will be ready to put in the oven in about ten minutes!

Ingredients:

  • 1 tbsp chia seeds
  • 1/3 cup peanut butter
  • 2 very ripe bananas
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 pinch salt
  • 1/2 cup sugar
  • 1 1/2 cups flour
  • 1/2 cup walnuts (optional)

Directions:

  1. To make the chia egg, mix chia seeds with 3 tbsp water. Set aside.
  2. Mash in the bananas with a fork.
  3. Add the rest of the ingredients up to the flour, one at a time, mixing in between each.
  4. Fold in the flour, until no streaks remain. Be careful not to over-mix.
  5. Optional: Stir in the walnuts.
  6. Line a loaf pan with parchment paper and bake at 350F for 50 minutes.
  7. Let it cool in the pan for at least 10 minutes, then remove and let it continue to cool. Enjoy!
