Impossible Beef Tacos

Two, maybe three years ago. I ate my firstImpossible burger— restaurant style. I don’t think I would have been able to tell that it was plant-based. Since going beef-free for about a year now, I’ve been so focused on beans that I forgot about the Impossible burger. My family had the Beyond burger months ago and it was not memorable. However, the Impossible burger — it’s definitely something. We also made vegan burgers, recipe coming soon!

I’m very impressed a video narrated by Pat Brown, CEO of Impossible Foods. He recognizes animal agriculture as the number one issue this planet faces. I concur. I recently published a cookbook, and someone pointed me to learn more about the concerning inefficiency of animal agriculture, “animal ag” for short. I was shocked, though I included similar metrics in my cookbook, I didn’t look into them in too much depth. If the world reduced its meat consumption by 70%, humanity could essentially reverse climate change. I have so much to say, with only my basic knowledge of animal agriculture, but I will save it for my next post. Stay tuned!

Taco night is super easy, because I only use two pans, one for the protein, which is often tofu or beans, but in this case Impossible beef, one for the homemade tortillas. The rest of the ingredients are fresh!

Ingredients

  • Flour Tortilla recipe from “Green Enchiladas” in my cookbook!
  • 1 onion, diced
  • 1 lb Impossible ground beef
  • 1/3 cup salsa
  • 2 tomatoes, diced
  • 1/3 head lettuce, slivered
  • 1 cup of cheese, preferably vegan :)
  • 1 jalapeno, thinly sliced
  • Tapatio
  • salt and pepper to taste

Directions

  1. Heat a large saucepan, then add oil. Add onions and reduce. Add ground beef and cook mostly through before adding salsa. Cook through, no need to drain!
  2. Make the flour tortillas according to the recipe found in my cookbook.
  3. That’s it! Serve and enjoy.
