make this once you are sick of Honey Bunches of Oats like me

My parents have been buying Honey Bunches of Oats by the box — Costco style. The more I eat it, the more I realize that is just a processed, slightly salty, unfulfilling cereal. Instead, this granola is filling and yummy. Plus, it is so easily customizable. 10 minutes in the oven and an hour or two in the fridge, and this granola is ready to eat!
Eat this with homemade hemp milk for a plant-based breakfast :)
Ingredients
- 2 cups oats
- 1/2 cup chopped nuts
- 1/4 cup seeds: pumpkin, sunflower, poppy, chia, flax, sesame, etc
- 1 tsp salt
- 1/3 cup coconut oil
- 1/4 cup brown sugar
- 1/4 cup honey
Directions
- Combine oats, nuts, and seeds on a baking tray. Bake at 350F for 8–10 minutes until toasty-smelling.
- Heat salt, oil, brown sugar, and honey in a saucepan (or in the microwave). Mix to make sure it is all melted.
- In a large bowl, mix toasted oats with liquid until everything is coated.
- Return to baking tray, spread out and flatten. Refrigerate for up to 2 hours to harden.
- Remove from oven and return to room temperature — then put it in a storage container, but not before taking a bite!
- Bonus: homemade hemp milk. Blend ice cold water (don’t add the ice!) and 1 tbsp of hemp seeds until smooth, about 1 to 2 minutes. Add maple syrup and a pinch of salt if desired.
- Enjoy for breakfast — or for a 4pm snack.
